Time to roll up the sleeves and cook with cranberries! My Princesses and I were guest chefs as we gave a cooking demonstration at the Wisconsin Cranberry Discovery Center in Warrens, WI. Nodji VanWychen, the Queen's committee chairperson, critiqued our presentations and gave us great ideas to make our program even better! This was our first food demo together in preparation for the State Fair coming up in August. Mark your calendars and come see us at the Monroe County Fair at 2 p.m. on Friday, July 31 st, as we cook with cranberries. Come learn just how bold, versatile, and healthy the mighty little cranberry is. Here is just one of the nine recipes demonstrated by the Royalty. Cranberry Queen's Salsa
2 medium tomatoes, chopped
1/3 cup onions, chopped
1/3 cup fresh cilantro, chopped
1 15.25 oz can corn, drained
1 15.25 oz can black beans, drained
½ cup sweetened dried cranberries
1 17 oz jar cranberry salsa
Salt and pepper to taste
In a medium bowl, combine all the ingredients. Stir and let stand for 15 minutes before serving to blend the flavors.
